Citric acid is the first organic acid, soluble in water, is a natural preservative and food additive. According to the different water content, it can be divided into monohydrate citric acid and anhydrous citric acid. Due to the physical properties, chemical properties, derivatives properties, is widely used in food, medicine, daily chemical industry and other most important organic acids.


Because citric acid has a mild and refreshing sour taste, it is mainly used as a food additive in carbonated drinks, fruit juice drinks, lactic acid drinks and other cool drinks and pickled products, and its demand varies with the change of seasonal climate. Citric acid accounts for about 2/3 of the total consumption of the acid flavor agent. Adding citric acid to canned fruits can preserve or improve the flavor of stored fruits, increase the acidity of some fruits with low acidity (lower pH), reduce the heat resistance of microorganisms and inhibit their growth, and prevent bacterial canning and destruction that often occur in canned fruits with low acidity. The addition of citric acid as a sour flavor agent in candy is easy to harmonize with the fruit flavor. The use of citric acid in gel food such as sauce and jelly can effectively reduce the negative charge of pectin, so that the hydrogen bond between pectin molecules to gel. In the processing of canned vegetables, some vegetables are alkaline reaction, with citric acid as pH adjustment agent, not only can play the role of seasoning, but also can maintain its quality. Citric acid has the properties of chelating and regulating pH value, which can increase the performance of antioxidant, inhibit enzyme activity and prolong the shelf life of food in the processing of frozen food.

Citric acid monohydrate is mainly used as an acid flavoring agent for cool drinks, fruit juice, jam, fruit candy and cans, and can also be used as an antioxidant in cooking oil. At the same time improve the sensory properties of food, enhance appetite and promote the digestion and absorption of calcium and phosphorus in the body.

Anhydrous citric acid is used in large quantities in solid beverages.
